Fresh Herb and Feta-Crusted Salmon

Ingredients
- 1 lb Salmon fillet
- 1 large clove of garlic minced
- juice from 1 small lemon
- Sea Salt and Freshly Cracked Pepper to taste
- 2 tbsp fresh dill chopped
- 2 tbsp fresh parsley chopped
- 2 tbsp feta cheese
- lemon wedges for serving
Instructions
- Preheat the oven to 425 degrees. Line a baking sheet with parchment paper or foil (for easier cleanup) then coat it with cooking spray.
- Rub the minced garlic all over the salmon then squeeze the juice of a small lemon all over. Season with sea salt and freshly cracked pepper, to taste. Sprinkle the top with some chopped parsley, fresh dill, and feta cheese.
- Place into the oven to bake for 13-15 minutes or until the salmon flakes easily with a fork and is medium-rare. Don't overcook!
- Remove from the oven and serve with additional slices of lemon if desired. Serve immediately. Enjoy.
