Ingredients
- 4 peaches (seeded, peeled and chopped)
- 2 medium roma tomatoes
- 1/2 onion, chopped
- 2 cloves garlic, minced
- 1 small red pepper, chopped
- 1 to 2 jalapeños (seeded and diced)
- 2 tablespoons lime juice (freshly squeezed is best)
- 1/4 cup cilantro, chopped
- 1/4 teaspoon taco seasoning (I use a low salt version)
Instructions
- Stir all ingredients together in a bowl until well combined. Serve immediately or cover and refrigerate until ready to serve.

Notes
- Recipe Tips:
- Be sure to use fresh peaches that are ripe but not overripe. You want them to hold their shape and not get mushy.
- Use fresh ripe Roma tomatoes because they have great flavor and generate less liquid than other types of tomatoes.
- Drain the tomatoes before adding to the salsa to prevent too much liquid getting into the salsa.
- Use a slotted spoon to drain any excess liquid when serving.
