Ingredients

  • 4 peaches (seeded, peeled and chopped)
  • 2 medium roma tomatoes
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 1 small red pepper, chopped
  • 1 to 2 jalapeños (seeded and diced)
  • 2 tablespoons lime juice (freshly squeezed is best)
  • 1/4 cup cilantro, chopped
  • 1/4 teaspoon taco seasoning (I use a low salt version)

Instructions

  1. Stir all ingredients together in a bowl until well combined. Serve immediately or cover and refrigerate until ready to serve.

Notes

  • Recipe Tips:
  • Be sure to use fresh peaches that are ripe but not overripe. You want them to hold their shape and not get mushy.
  • Use fresh ripe Roma tomatoes because they have great flavor and generate less liquid than other types of tomatoes.
  • Drain the tomatoes before adding to the salsa to prevent too much liquid getting into the salsa.
  • Use a slotted spoon to drain any excess liquid when serving.
