Ingredients

  • 4 peaches (seeded, peeled and chopped)
  • 2 medium Roma tomato
  • 1/2 onion chopped
  • 2 cloves garlic minced
  • 1 small red pepper chopped
  • 1 to 2 jalapeños (seeded and diced)
  • 2 tablespoons lime juice (freshly squeezed is best)
  • 1/4 cup Coriander chopped
  • 1/4 teaspoon taco seasoning (I use a low salt version)

  1. Stir all ingredients together in a bowl until well combined. Serve immediately or cover and refrigerate until ready to serve.

Notes

  • Use ripe but firm peaches to maintain chunks without turning mushy in the salsa.
  • Choose fresh Roma tomatoes for their flavor and lower liquid content.
  • Drain tomatoes before adding to the salsa to prevent it from becoming too watery.
