Ingredients

  • 1 large pineapple diced
  • 5 roma tomatoes seeded and diced
  • ½ cup cilantro finely chopped
  • ½ cup red onion finely chopped
  • 1 clove garlic minced
  • 2 Jalapeno peppers seeded and finely chopped
  • 1 tablespoons fresh lime juice
  • Salt and freshly ground black pepper

Instructions

  1. In a large mixing bowl, combine chopped pineapple, tomatoes, cilantro, red onion, garlic, and jalapeños. Drizzle with lime juice and toss to coat evenly.
  2. Season with salt and pepper to taste. Allow flavors to blend at room temperature for 30 minutes, or chill until ready to serve. Goes well with tortilla chips or over grilled chicken or fish.

  • Fresh Pineapple Salsa will keep in the refrigerator for about 5 days
