Fresh Strawberry Syrup

Today I am showing you how to make Strawberry Syrup using fresh strawberries, fresh lime juice, pure cane sugar and a touch of water. This no-cook strawberry syrup is perfect to brighten and bring a bit of sunshine to cocktails, mocktails, ice cream and more!

Ingredients

  • 1 cup fresh strawberries washed and rough chopped (up to 2 cups if desired)
  • 0-1 cup all-natural cane sugar see notes | may use white sugar too
  • 2 teaspoons lime juice* to 1/2 cup; about 3 large limes
  • 2 tablespoons water

Instructions

  1. Place strawberries, sugar, lime juice and water in a blender and process until smooth and sugar has dissolved.
  2. It'll take about 2 minutes using all-natural cane sugar, could take a little less time using white sugar. Mixture should be smooth and syrup like.
  3. Refrigerate until ready to use in airtight container. Store in fridge up to 3 weeks.

Notes

  • If not quite as limey of flavor is desired, may cut down considerably on the lime juice, as little as two teaspoons, if you choose to do that, I would also cut back on the sugar, to a few tablespoons up to 1/2 a cup. Adjust according to taste.
  • TIP | to get the most juice out of your lime, microwave for 10 seconds, then gently roll on counter beefore slicing and juicing.
  • Frozen Strawberries may be used though they will not be a fresh or bright tasting as fresh.
  • Can I reduce or omit the sugar?
  • Yes! I would only add a couple of teaspoons of lime juice so you don't overpower the sweetness of the strawberries. For using in drinks, it won't give you the same balance as with sugar, but it's a matter of taste.

  • Dessert Sauce | Pour over vanilla ice cream or on this scrumptious strawberry shortcake. But don't keep it to just vanilla desserts, this would also be fabulous on chocolate ice cream, chocolate strawberry shortcake, or even this amazing chocolate bread pudding.
  • Yogurt Parfaits | This sauce with be a bright and vibrant addition to layer in a healthy yogurt parfait! Maybe even give it a go using homemade Greek yogurt!
  • Breakfast Syrup | Use to pour over pancakes, waffles, try on this easy Dutch Oven Pancake, or even over this overnight French Toast.
