Ingredients
- 1 big or 2 medium red bell pepper, cut into 5 cm – 2 inch pieces
- 2 big potatoes or 3 medium, chopped into 3 cm – 1 ¼ inch cubes
- 1 medium onion sliced
- 3 tbsp extra virgin olive oil
- salt to taste
Notes
- You can also cover the vegetables with a lid while frying them, this will shorten a bit the cooking time.
