Ingredients

  • 1-2lbs fresh or frozen squid
  • 2 cups heavy cream or milk
  • 1 teaspoon salt for tenderizing
For the Dry Batter
  • 1 cup flour
  • 1/4 cup yellow cornmeal
  • 1/4 cup cornstarch
  • 2 teaspoons old bay
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder

Instructions

  1. Begin by slicing your squid into even rings. Set aside.
  2. Add the squid to a large bowl. Next, add salt and heavy cream to the bowl to tenderize. Let it sit for at least twenty minutes.
  3. Pour 3 inches of oil into a large skillet. Preheat the oil to 350 degrees Fahrenheit.
  4. To prepare the drying batter, combine cornstarch, cornmeal, and spices in a bowl. Mix well.
  5. Start by taking the wet squid mixture and coating it in the dry batter, making sure to shake off any excess flour.
  6. Fry the squid in batches for 5 minutes or until golden brown.
