Fried Green Tomatillos

These fried green tomatillos are like their Southern cousins, with a Southwestern flair. They are perfectly fried and paired with a Greek yogurt sauce.

Ingredients

For tomatillos:
  • 4 large tomatillos sliced 1/4 inch thick
  • 1 cup buttermilk
  • 1 large egg
  • 1 cup cornmeal
  • ½ cup all purpose flour
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • ½ teaspoon garlic powder
  • ¼ cup vegetable oil more as needed
For sauce:
  • 1 cup plain greek yogurt
  • 2 tablespoons minced cilantro
  • 1 tablespoon lime zest
  • 1 tablespoon lime juice
  • ½ teaspoon smoked paprika
  • ½ teaspoon chili powder
  • ¼ teaspoon kosher salt

Instructions

For tomatillos:

  1. Remove husks from tomatillos and clean the skin. Cut in slices and set aside.
  2. In a shallow dish, whisk together buttermilk and egg. In another shallow dish, stir together cornmeal, flour, kosher salt, black pepper, and garlic powder.
  3. Dip tomatillo slices into buttermilk mixtures and coat in cornmeal mixture. Once all the slices have been coated start heating you oil.
  4. Coat the bottom of a 12-inch frying pan with vegetable oil and set over medium-high heat.
  5. Once the oil is hot, add in coated tomatillo slices and fry until golden brown, flip and fry till the other side is golden brown. About 3-5 minutes per side.
  6. Lay fried tomatillo slices onto a wire rack lined baking sheet.
  7. Add more oil to the pan as needed while frying each batch of tomatillo slices.
  8. Serve immediately with cover with sauce. You can also sprinkle with minced cilantro and more smoked paprika if desired.
For sauce:
  1. In a small bowl mix together all ingredients.
  2. Taste and season with more seasoning if needed.
  3. Keep refrigerated until ready to use.

Notes

  • It is normal for the tomatillos to feel sticky after you remove the papery husk. To remove the sticky residue, simply rinse the tomatillos under cool water. 
  • Serve with the creamy dipping sauce and salsa, or serve plain. You could also put them on top of a burger! Try them on my Cheesy Salsa Burger or my Baja Burger.
