Ingredients

  • 4 green tomatoes , cut into ½ inch (1,5 cm) thick slices
  • 2 eggs
  • ½ cup milk
  • 1 cup all-purpose flour
  • 1 cup cornmeal
  • 1 cup breadcrumbs
  • 1 tablespoon salt
  • black pepper , freshly ground
  • 1 quart vegetable oil , for frying

Instructions

  1. In a small bowl, whisk the milk and eggs vigorously.
  2. Pour the flour into a deep plate.
  3. In another shallow plate, combine the cornmeal, breadcrumbs, salt and pepper.
  4. Dip the tomatoes in the flour, coating them well.
  5. Then dip the tomatoes in the milk and egg mixture, then dip them in the cornmeal and breadcrumbs mixture, coating them well.
  6. Heat the oil in a large, deep frying pan and bring it to 350 F (180°C) using a kitchen thermometer.
  7. Dip the tomato slices in the hot oil in batches of 4 or 5 to prevent them from touching.
  8. Fry them until golden brown and crispy on one side. Then turn them over and fry them on the other side.
  9. Transfer the fried tomatoes to a large serving dish lined with paper towels to drain.
  10. Repeat the same process until you run out of tomato slices.
  11. Serve hot.
