Ingredients

  • 1 pound button mushrooms cleaned and stems trimmed
  • 1 cup all-purpose flour
  • 1 cup buttermilk
  • 1 egg large
  • 1 cup panko breadcrumbs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • vegetable oil for frying

Instructions

  1. Trim the stems from the mushrooms and clean them gently with a damp towel.
  2. In a bowl, whisk together the flour, buttermilk, and egg until smooth.
  3. Dip each mushroom into the batter, then roll in panko breadcrumbs mixed with salt and pepper.
  4. Heat oil in a deep-fryer or large pot to 375°F. Fry the mushrooms in batches until golden brown, about 3-5 minutes. Drain on paper towels.
