Ingredients
- 3 cups corn kernels fresh off the cob, or two 12-14 ounce cans of corn, drained
- ½ red bell pepper diced ¼-inch
- ½ green bell pepper diced ¼-inch
- ½ red onion diced ¼-inch
- 4 ounces diced jalapenos drained, or 4 oz mild green chiles drained
- ⅔ cup mayonnaise
- 2 teaspoons chili powder
- 1 ½ cups shredded cheddar cheese
- 5 ounces Fritos chips
Instructions
- Combine all ingredients except Fritos in a large bowl and mix well.
- Just before serving, stir in Fritos.
- Season with salt & pepper to taste.

- If making ahead, leave the Fritos on the side and add when ready to serve so they stay fresh and crunchy.
