Frito Corn Salad

Frito Corn Salad combines sweet corn, fresh bell peppers, spicy jalapenos and of course crunchy Fritos all in a creamy dressing.  This is the perfect potluck side dish or appetizer dip!

Ingredients

  • 3 cups corn kernels fresh off the cob, or two 12-14 ounce cans of corn, drained
  • ½ red bell pepper diced ¼-inch
  • ½ green bell pepper diced ¼-inch
  • ½ red onion diced ¼-inch
  • 4 ounces diced jalapenos drained, or 4 oz mild green chiles drained
  • ⅔ cup mayonnaise
  • 2 teaspoons chili powder
  • 1 ½ cups shredded cheddar cheese
  • 5 ounces Fritos chips

Instructions

    Cup of Yum
  1. Combine all ingredients except Fritos in a large bowl and mix well.
  2. Just before serving, stir in Fritos.
  3. Season with salt & pepper to taste.

Notes

  • If making ahead, leave the Fritos on the side and add when ready to serve so they stay fresh and crunchy.
