Ingredients

  • 8 large eggs
  • 1/3 cup heavy whipping cream
  • 1 tsp salt
  • 1 cup cherry tomatoes halved
  • 1 cup kale chopped
  • 1 cup mozzarella cheese grated
  • 2 oz goat cheese

Instructions

  1. Preheat the oven to 400°F. In a medium bowl, whisk together the eggs, heavy cream, and salt. Set aside.
  2. Grease a 10 inch skillet with butter or oil. Add the tomatoes and kale to the pan.
  3. Pour the egg mixture over the veggies. Sprinkle the mozzarella and goat cheese evenly over the eggs.
  4. Bake the frittata for 15-20 minutes, or until the edges are set. Let it rest for 5-10 minutes before serving, then enjoy!
