Frittata with Jalapeno Chicken Sausage, Spinach, Roasted Bell Peppers, and Feta

Ingredients

  • cooking spray
  • 3 chicken jalapeno sausage sliced
  • ¼ cup bell pepper diced, roasted
  • ½ cup baby spinach chopped
  • 2-3 tbsp feta cheese crumbled
  • 7-8 egg well-beaten
  • 2 tbsp milk or heavy cream
  • salt to taste, sea salt and freshly cracked
  • black pepper to taste, sea salt and freshly cracked

Instructions

  1. Preheat the oven to 350 degrees. Coat a tart pan or pie dish with cooking spray.
  2. Heat a skillet that has been coated with cooking spray. Once the skillet is hot, add the sausage and cook for 3-4 minutes, stirring occasionally, or until golden brown.
  3. Place half of the sausage, roasted bell pepper, spinach, and feta into the bottom of the tart pan.
  4. Mix the eggs with the milk until well combined, then season with sea salt and freshly cracked pepper, to taste.
  5. Pour the egg mixture into the baking dish, then place the remaining sausage, roasted bell pepper, spinach, and feta on top.
  6. Place into the oven and bake for 20 minutes or until a tester inserted in the center comes out clean.
  7. Remove from the oven and cool for 5 minutes before cutting. Enjoy!
