Frosted Chocolate Pecan Cookies

Ingredients

Cookie Ingredients
  • 1 15.25 chocolate cake mix
  • 2 large eggs
  • 1/3 cup vegetable oil or canola oil
  • 1/2 cup pecans chopped
Frosting Ingredients
  • 1/2 cup unsalted butter (1 stick)
  • 3 tablespoons whole milk
  • 2 tablespoons unsweetened cocoa powder
  • 2 cups powdered sugar

  1. Preheat oven to 350F. Prepare cookie sheets with parchment paper or silicone baking mats.
  2. In a large mixing bowl, combine the cake mix, eggs, and oil; mix well. Fold in the chopped pecans.
  3. Scoop the dough onto the cookie sheets to form 1½ inch dough balls, leaving at least 2 inches between each.
  4. Bake the cookies at 350F for 8-10 minutes until set.
  5. Allow the cookies to cool on the cookie sheets for 2 minutes, then transfer to a wire cooling rack to cool to room temperature.
  6. In a medium saucepan, melt the butter over medium heat. Whisk in the whole milk, and cocoa powder.  Remove the saucepan from the heat and whisk in the powdered sugar. Continue to whisk until the frosting is smooth. Tip: if you find the powdered sugar is not fully incorporating into the frosting leaving lumps, return the saucepan to the heat and whisk the frosting until smooth.
  7. Place a cookie sheet under the wire cooling racks of cookies to catch excess frosting. Spoon the frosting over the cookies.Allow the frosting to set for 15 minutes.
