Ingredients
- ¾ cups butter softened
- ¼ cup shortening
- 1 ½ cups granulated sugar
- 2 eggs
- 1 ½ teaspoon vanilla extract
- 2 ½ cups flour
- 1 box instant vanilla pudding
- 1 teaspoon baking powder
- ½ teaspoon salt
Sugar Cookie Frosting Ingredients
- 1/2 cup unsalted butter softened
- 4 cups powdered sugar
- 6 tablespoons heavy cream
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract or peppermint extract
- Food Coloring optional
- Christmas sprinkles optional
Instructions
- Preheat the oven to 350 degrees F.
- Line a baking sheet with parchment paper or a silicone baking mat.
- Beat the butter, shortening, and sugar with an electric mixer for 3 minutes until soft and creamy.
- Add the eggs, vanilla, and instant pudding mix to the mixing bowl. Continue mixing until completely combined.
- In a medium bowl, stir together the flour, baking powder, and salt.
- Add the dry ingredients to the butter mixture a little at a time. Mix between additions until all the flour is incorporated.
- Use a cookie scoop or spoon to drop rounded tablespoons of dough onto the prepared baking sheet. Space the dough balls about 2 inches apart.
- Bake in the preheated oven for 12-15 minutes. They are done when light golden brown around the edges and the middle is set.
- Let them cool on the baking sheet for 5 minutes. This allows them to firm up. Then put them to a wire rack to finish cooling.

Frosting
- Make the frosting while the cookies cool. Use a mixer to beat the butter until it is light and fluffy.
- Gradually add the powdered sugar and heavy cream, beating between each addition. Continue adding and mixing until it is all well incorporated.
- Add the vanilla and salt and mix well.
- Put the frosting in separate bowls to make the red, green, and white frosting. Gradually add drops of gel food coloring to the red and green icing until you reach the desired color.
- Add a layer of frosting to the cookies when they are completely cool. Decorate with sprinkles.
