Frozen Chocolate-Covered Banana Slices Topped with Coconut

Ingredients

  • 2 cups milk chocolate chips
  • 2 tbsp coconut oil
  • shredded sweetened coconut
  • 3 ripe bananas peeled, cut into ½-inch-thick slices

Instructions

  1. Stir the chocolate and oil in a small heavy saucepan over low heat just until smooth. Let stand 10 minutes to cool.
  2. Line a baking sheet with parchment paper.
  3. Place the coconut in a separate shallow dish.
  4. Using a fork, dip 1 banana slice in chocolate, coating completely.
  5. Shake off excess chocolate.
  6. Place on the lined baking sheet.
  7. Repeat with the remaining bananas.
  8. Sprinkle the top of each banana slice with shredded coconut. 
  9. Place into the freezer and freeze until firm, about 3-4 hours, then serve immediately.
  10. Store the remaining banana slices in a freezer bag or sealed container. Enjoy.
