Frozen Chocolate Peanut Butter Banana Bites
A classic treat! These Frozen Chocolate Peanut Butter Banana Bites are the best healthy sweet bite! They're perfect for curving your afternoon sweet tooth or delicious with some pretzels and milk for dessert! You can't go wrong with this freezer snack!

Ingredients
- 2 large bananas or 3 small ones
- 3 Tbsp peanut butter
- 1/2 cup chocolate chips I used Enjoy Life
- 1 tsp coconut oil
Instructions
- Peel and slice your banana into 1/4-1/2 inch slices (I had about 32 slices total).
- Like a small baking sheet with parchment paper. Add the banana slices and spread about 1/2 tsp peanut butter on half of them, then top with the other half of the banana slice. Freeze for an hour.
- Once they’re frozen, melt the chocolate and coconut oil in the microwave in 30 seconds intervals, stirring in between until melted.
- Remove the bites from the freezer and dip the bites in the chocolate so half of each bite is coated, then place back on the baking sheet. **Work quickly doing this because the longer the banana bites are out the sticker they’ll get (or work in batches keeping half in the freezer).
- Place back in the freezer to harden then store in a freezer safe bag!

Notes
- To make dairy-free/vegan: use dairy-free/vegan friendly chocolate chips. My go-to chips for any baking recipe are Enjoy Life mini chocolate chips!
- To make nut-free: if you have a nut allergy, use sunflower seed butter in place of peanut butter.
- Store these banana peanut butter bites in a freezer safe bag in the freezer for up to 3 months.
- Helpful Tips
- It can be helpful to work in batches while dipping the frozen banana bites in chocolate. The longer the banana bites sit at room temperature, the sticker they will get so I like to keep half in the freezer while I dip the first batch. Then I add those to the freezer and work on the second half to try to keep them as frozen as possible!
- Choose a banana that's ripe but still firm. If it's not ripe enough, it will be tasteless. If you use overripe bananas, it will be difficult to work with and will get mushy.
- Coconut oil helps make the chocolate melt and easier to work with. Use unrefined coconut oil to avoid the coconut taste.
- If the chocolate starts to harden and it becomes more difficult to coat the sandwiches, re-melt it in the microwave for a few seconds.
- Don't slice your banana too thin! You want even, thick rounds (1/4-1/2 inch slices) for your banana slices so that it will hold the peanut butter steadily.
