Frozen Coconut Lemonade
Frozen Coconut Lemonade blends fresh lemon juice, sugar syrup, thick coconut milk, and ice to create a creamy, tart frozen beverage. The mixture is whipped until frothy in a blender and served chilled, optionally garnished with lemon wedges. This refreshing drink combines tropical coconut creaminess with bright citrus flavors and can be adapted with added spirits for a cocktail version.
Ingredients
- ¾ cup lemon juice freshly squeezed is preferred
- ¾ cup granulated sugar
- ½ to ⅔ coconut milk chilled in fridge for at least 2 hours or overnight, 14-ounce can full fat
- 2 ½ cups ice cubes about 10 large cubes, or as necessary
- lemon optional for garnishing, fresh wedges or slices
Instructions
- To a small saucepan, add the lemon juice, sugar, and heat over medium-high heat for about 2 minutes, stirring constantly to dissolve the sugar. This is your lemon simple syrup.
- To the canister of a high-speed blonder, add the lemon simple syrup, the thick and fatty part of the coconut milk (read blog post for discussion on this), ice, and blend on high until whipped and frothy. If you want it thicker, add additional ice cubes to taste.
- Optionally garnish with lemon wedges or slices and serve immediately.
Notes
- For best texture, use chilled full-fat coconut milk and blend it with ice until frothy.
- Alcohol such as flavored vodka or coconut rum can be added during blending to turn the drink into a cocktail.
- This recipe makes about two large servings or four smaller portions.
