Ingredients
- 2 pints So Delicious Dairy Free Peanut Butter and Raspberry Oatmilk Frozen Dessert, slightly softened
- 3 cups milk chocolate chips
- 1/4 cup coconut oil
- ¼ cup creamy peanut butter
- optional: crushed freeze-dried berries, for topping
Instructions
- Line an 8x8 baking dish with parchment paper. Scoop the Oatmilk frozen dessert into the lined baking dish and use a spatula to spread it into an even layer. Place a piece of plastic wrap over top and freeze it for at least 6 hours, or overnight.
- The next day, lift the frozen square out of the dish and place it on a cutting board. Quickly cut the square into bars or squares and place them on a parchment lined baking sheet. Freezer for 2 hours, until solid.
- Make the chocolate topping: melt the chocolate chips and coconut oil in a microwave-safe bowl. I microwave for 30 seconds at a time, stirring after each time, until the chocolate is melted. Let it sit for 10 to 15 minutes so it cools down slightly. Melt the peanut butter in a separate bowl.
- Remove the bars from the freezer and quickly dip them in the chocolate. Drizzle with melted peanut butter. Place each back on the baking sheet. Freeze for another hour before serving.
- Before serving, you can crush some freeze dried berries on top if you’d like!
