Frozen Watermelon Cocktail

This Frozen Watermelon Cocktail combines summer fruit with a bubbly sparkling wine for a fun take on a summer bellini.

Ingredients

  • 20 ounces watermelon rind removed
  • 2-3 tablespoons water optional
  • 12 ounces prosecco
  • 4 prigs mint optional, or basil, for garnish

Instructions

    Cup of Yum
  1. Slice watermelon and place in the freezer for 4 hours to freeze.
  2. Remove frozen watermelon from the freezer and place in a blender. Puree (you can add 2-3 tablespoons of water to help the blender along if you need to but you want it to remain a pretty firm slush.)
  3. Pour equal portions of watermelon slush into 4 glasses.
  4. Pour 3 ounces each of Prosecco or other sparkling white wine over the watermelon slush in each glass. Stir gently to mix.
  5. Add mint for garnish. (optional)
