Fruit, Avocado, and Feta Salad

Salads are great because all measurements are approximate!

Ingredients

  • lettuce (I use half romaine, half spinach)
  • apple, peeled and diced (about 1)
  • strawberries, sliced
  • avocado, diced
  • dried cranberries
  • sliced green onions
  • toasted sliced almonds
  • crumbled feta
Dressing: (makes around 1/2 cup)
  • 3 tablespoons fresh orange juice
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 clove garlic
  • salt and pepper (about 1/4 t. salt and fresh cracked pepper)

Instructions

  1. For the salad: Arrange all ingredients in a bowl. Measurements are up to you and how much you like of everything.
  2. For the dressing: Add all ingredients to a blender. Blend until smooth. Dressing can be made ahead of time and stored in the fridge. Toss salad with dressing right before serving to avoid sogginess.
