Fruit Cake Muffins

Ingredients

  • 1/2 cup shortening
  • 1/2 cup sugar
  • 3 large egg
  • 1 tablespoon vanilla extract
  • 1 1/2 cups flour
  • 1/2 teaspoon baking powder
  • 1 1/2 teaspoons cinnamon
  • 3/4 teaspoon nutmeg
  • 1/2 teaspoon allspice
  • 1/2 teaspoon salt
  • 1/4 teaspoon cardamom
  • 1/2 cup candied cherries red
  • 1/2 cup candied cherries green
  • 1 1/2 cups pineapple candied
  • 1 cup golden raisins
  • 2 cups pecans , chopped

Instructions

  1. Preheat oven to 350° and line a two muffin tins with muffin liners.
  2. Add your shortening and sugar to a stand mixer or a large bowl with a hand mixer on medium speed for 1-2 minutes until light and fluffy.
  3. Add in the eggs one at a time until fully combined, then add in the vanilla extract.
  4. Add in the flour, baking powder, cinnamon, nutmeg, allspice, salt and cardamom until just combined then fold in the chopped dried fruit and walnuts.
  5. Scoop the mixture into your muffin liners using an ice cream scoop or a 1/4 cup measure.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
