Fruit Kabobs with Ginger Lemon Yogurt Sauce

Ingredients

  • 12 Wooden skewers
  • 2 bananas (cut in 1 in. pieces)
  • 2 clementines
  • 1 cup watermelon (diced)
  • 1 cup strawberries (halved)
  • 1 cup honeydew melon (diced)
Ginger Lemon Yogurt Sauce:
  • ½ cup PLAIN yogurt (low fat)
  • 1 teaspoon vanilla
  • 1 teaspoon fresh ginger (grated)
  • 1 teaspoon lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon fresh mint (minced)
  • honey to sweeten (optional)

Instructions

  1. In a small bowl, whisk together ginger lemon yogurt sauce by combining all ingredients listed.
  2. Create fruit kabobs on wooden skewers in any order you wish. Get the kids involved – this is fun!
  3. Plate kabobs on a platter and drizzle with yogurt sauce to serve.

Notes

  • Mix up the fruit you use based on what’s currently in season. Feel free to get creative!
  • Honey is optional for the Ginger Lemon Yogurt sauce. Feel free to add it if you need the sweetness. You may wish to skip the honey if your fruit is very ripe (or if you’re a parent with littles who can’t have honey yet!)
