Fruit Mince Muffins

Fruit Mince Muffins combine self-rising flour with a fruit mince filling for a tender, moist texture. A batter including milk, vegetable oil, egg, and vanilla surrounds the sweet mincemeat, which is sandwiched inside each muffin. The tops are brushed with melted butter and dipped into fine sugar, adding a crunchy, sweet crust.

Ingredients

  • 300 gm self-rising flour
  • 150 gm caster sugar 3/4 cup
  • 250 ml milk
  • 80 ml vegetable oil
  • 1 whole egg beaten, large
  • 1 teaspoon vanilla
  • 410 gm mincemeat such as Robertsons from any supermarket) or make your own, fruit mince
  • 100 gm butter melted
  • 50 gm sugar extra fine for dipping the tops in

Instructions

  1. Pre-heat the oven to 170 C / 340 F
  2. Put the dry ingredients in a bowl, and mix together.
  3. In a separate bowl whisk the milk, oil, egg and vanilla, until well blended. Pour this mix together until JUST combined. Do not overmix. It will become tough.
  4. Use a muffin tray ( mini or larger) and cupcake papers to fit . Half fill each muffin case then using a teaspoon, spoon a teaspoon of mince onto the top of each . Cover this mince mixture with a spoonful of muffin mixture.
  5. Bake these for approximately 20 minutes, or until slightly risen and firm to touch.
  6. Cool on a cake rack.
  7. Paint the top of each muffin with butter and then dip each into caster sugar.
