Ingredients

Cookie Base:
  • 1/2 cup butter at room temperature
  • 1 cup sugar
  • 2 egg
  • 1 tablespoon milk
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 2 1/2 cups all-purpose flour
Topping:
  • 4 oz cream cheese
  • 2 tablespoons butter unsalted
  • 1 teaspoon vanilla extract
  • Pinch salt
  • 1 1/2 cups powdered sugar
  • Fruit assorted

Instructions

  1. In a large bowl (or the bowl of a stand mixer) cream the butter and the sugar together until they are lighter in color. Add in the eggs, one at at time, mixing until combined.
  2. Mix in the milk, baking powder, vanilla, and salt. Start adding in the flour, 1/2 cup at a time, until you have a dough that is soft, but not sticky.
  3. Remove the dough from the bowl and wrap in plastic wrap. Refrigerate for 30 minutes.
  4. Once the dough has been refrigerated, heat the oven to 350ºF. Spray a 15-inch pizza pan with nonstick cooking spray.
  5. Remove the dough from the plastic wrap and press the dough into the pizza pan, evening it out as much as possible. Bake in the preheated oven until the dough is slightly set up and golden brown, about 18 minutes. Remove from the oven and let it cool completely.
  6. When the crust is cooled, make the topping. In a bowl, beat the cream cheese and the butter together. Beat in the vanilla and the salt. Start slowly adding in the powdered sugar until you have a thick, but spreadable frosting.
  7. Spread the frosting in an even layer over the crust.
  8. Decorate the top with fruit.

Notes

  • The cookie base can be made ahead of time, and the frosting can be made ahead of time, but I wouldn't suggest assembling the pizza until shortly before you are ready to serve it.1
