Funfetti Coconut Macaroons

Funfetti Coconut Macaroons take less than 40 minutes and are ultra fun and colorful, perfect for a baby shower, bridal shower, or birthday party! No mixer required, and no condensed milk.

Ingredients

  • 1 1/3 cups sweetened shredded coconut 90 grams
  • 1/3 cup granulated sugar 66 grams
  • 3 tablespoons all-purpose flour
  • salt pinch
  • 2 egg large, whites
  • 1/2 teaspoon vanilla extract
  • 1/2 cup multicolored jimmies oblong sprinkles 90 grams

Instructions

  1. Preheat the oven to 325°F. Line a baking sheet with parchment paper.
  2. In a medium bowl combine the coconut, sugar, flour, and salt. Add the egg whites, vanilla, and sprinkles. Mix very well until everything is thoroughly coated in egg white.
  3. Form into 2-teaspoon sizes mounds onto the prepared pan, pressing down slightly to adhere. Bake for about 20 minutes, or until golden brown.
  4. Cool 10 minutes on the baking sheet before transferring to a rack to cool completely. Serve or store in an airtight container at room temperature for up to 5 days.
