Funfetti Cookies with Chocolate Chunks

Cakey cookies with chocolate chunks and rainbow jimmie sprinkles – fun for kids and grown-ups!

Ingredients

  • 2 cups cake flour
  • ⅔ cups all-purpose flour
  • ¾ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup unsalted butter 2 sticks, at room temperature
  • 1 cup sugar
  • 1 egg large
  • 2 teaspoons vanilla extract
  • 1 semisweet chocolate baking chunks 62% cacao, 6-ounce bag
  • ½ cup Sprinkles rainbow jimmie

Instructions

  1. Preheat oven to 375 degrees F. Line a baking sheet with parchment paper or a silicone baking mat; set aside.
  2. In a medium bowl, combine flours, baking soda and salt.
  3. In the bowl of an electric mixer fitted with the paddle attachment, beat butter and sugar on medium-high until well combined, about 1-2 minutes. Beat in vanilla and egg until well combined. Gradually add flour mixture to sugar mixture at low speed, beating just until incorporated.
  4. Gently fold in chocolate chunks and sprinkles.
  5. Drop tablespoons of batter onto prepared baking sheet. Place into oven and bake until edges are golden brown but center is still moist, about 10-12 minutes.
  6. Remove from oven and cool on a wire rack.
