Ingredients

  • 5 ½ cups (5 oz/142 g) Rice Krispies cereal
  • 2 ½ cups (2 ¼ oz/65 g) Fruity Pebbles cereal
  • 1 cup (6 oz/170 g) white chocolate chips, plus an extra handful for topping (optional)
  • ¼ cup (2oz/57 g) butter
  • 5 cups (10 oz/285 g) marshmallows

Notes

  • This recipe uses Fruity Pebbles cereal to make it colorful. If you can’t find this, use an equal amount of Rice Krispie cereal and mix ½ cup (3 ½ oz/100 g) of sprinkles.
  • You can use either full sized or mini marshmallows to make this recipe. Go by weight for the most accurate measurement. If you don’t have a kitchen scale, look on the bag the marshmallows came in. There is usually a weight printed on there.
  • Marshmallows and butter can be melted on the stove if you don’t have a microwave. Use a large, heavy bottomed pot over low heat, stirring constantly to prevent burning, until fully melted.
  • Use low heat or short microwave spurts when melting marshmallows and stop cooking as soon as the marshmallows are melted. Overheated marshmallows can caramelize the sugar and result in hard rice krispies.
  • When mixing the cereal with the melted marshmallows, be gentle to keep the Fruity Pebbles intact. This will keep your treats looking their best.
  • For an extra special handheld treat, fill Homemade Ice Cream Cones (or store bought) with the Rice Krispie Treat while it’s still warm and let set before serving. Kids absolutely love this.
