Ingredients

  • 2 cups cooked white rice preferably day-old
  • 2 cups cooked black beans with some bean broth
  • 1 medium yellow onion finely diced
  • 1 red bell pepper finely diced
  • 2 cloves garlic minced
  • 1/4 cup Salsa Lizano or a similar seasoned sauce
  • 2 tablespoons vegetable oil
  • 1/4 cup fresh cilantro chopped

  1. Heat the vegetable oil in a large skillet over medium heat. Add the diced onions and bell peppers, sautéing until the onions are translucent and the peppers are tender.
  2. Stir in the minced garlic and cook for an additional minute until fragrant.
  3. Add the black beans with their broth and the Salsa Lizano to the skillet. Bring to a simmer and let cook for a few minutes, allowing the flavors to meld.
  4. Fold in the cooked rice, mixing well until the rice is heated through and has absorbed most of the liquid.
  5. Remove from heat and stir in the chopped cilantro. Serve warm.
