Ingredients

  • Fran's vinaigrette - Click the link up above for the recipe (or salad dressing of your choice)
  • 4 cups mixed greens
  • ½ cup grape tomatoes
  • ¼ cup bell pepper sliced, orange
  • ¼ cup broccoli florets
  • ¼ cup carrot shredded
  • ¼ cup cucumber diced
  • ½ avocado diced
  • ¼ cup mozzarella balls halved
  • 2 tbsp dried cranberries
  • 2 tbsp sunflower seeds toasted

Instructions

  1. Make Fran's vinaigrette, if desired; set aside and allow the flavors time to mingle.
  2. Combine the mixed greens, tomatoes, bell pepper, broccoli florets, shredded carrot, cucumber, avocado, mozzarella balls, dried cranberries, and sunflower seeds, in a large bowl.
  3. Drizzle the top with some of the well-whisked vinaigrette, to taste, and toss until evenly coated. Serve immediately. Enjoy.
