GARLIC BUTTER BRAZILIAN STEAK

Ingredients

  • 4 steak 6-8 ounce, such as top sirloin, picanha, or ribeye, about 1-inch thick
  • 1 olive oil tablespoon
  • 1 salt
  • ½ black pepper teaspoon
  • ½ garlic powder teaspoon
  • ½ onion powder
  • ¼ ground cumin
  • ¼ smoked paprika

  • ½ butter unsalted, 1 cup (1 stick

  • 2 parsley fresh, chopped
  • 1 lime juice
  • ¼ red pepper flakes teaspoon, optional

  1. Prepare steak: Pat the steaks dry with paper towels. In a small bowl, combine the salt, pepper, garlic powder, onion powder, cumin, and smoked paprika. Rub the spice mixture evenly over both sides of the steaks.
  2. Sear steak: Heat the olive oil in a large skillet (preferably cast iron) over medium-high heat. Once the oil is hot, add the steaks to the skillet. Sear for 3-4 minutes per side for medium-rare, 4-5 minutes per side for medium, or longer for your desired doneness. Use a meat thermometer to check the internal temperature of the steaks.
  3. Make garlic butter sauce: While the steaks are searing (or after they have been removed from the skillet), melt the butter in a separate small saucepan over medium heat. Add the minced garlic and cook for 1 minute, until fragrant. Stir in the parsley, lime juice, red pepper flakes (if using), salt, and pepper.
  4. Rest steak: Remove the steaks from the skillet and let them rest for 5-10 minutes before slicing. This allows the juices to redistribute, resulting in a more tender steak.
  5. Slice and serve: Slice the steaks against the grain. Drizzle the garlic butter sauce over the sliced steak. Serve immediately.

  • Steak Cuts: Top sirloin, picanha (a popular Brazilian cut), and ribeye are all good choices for this recipe. You can use other cuts as well, but adjust cooking times accordingly.
