Ingredients
- 1 lb baby potatoes halved
- 1 tbsp olive oil
- 4 boneless skinless chicken breasts thinly sliced
- 1 tsp Italian seasoning
- 1 tsp smoked paprika
- 1 lb green beans trimmed
- 4 tbsp butter
- 4-5 garlic cloves minced
- fresh parsley finely chopped for garnish
Instructions
- Pre-cook the potatoes: In a large pot of boiling water, cook potatoes for 15 minutes.
- Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt, pepper, smoked paprika, and Italian seasoning on both sides. Then add to the skillet and cook until golden on both sides, about 4-5 minutes per side. Remove chicken from skillet and set aside.
- In the same skillet, add the butter and garlic. Cook 1-2 minutes until fragrant.
- Add the pre-cooked halved baby potatoes to the skillet and cook for about 5 minutes, stirring occasionally.
- Add the green beans to the skillet. Cover with a lid and let everything cook together, about 6-8 minutes.
- Return the chicken to the skillet, nestling it in among the potatoes and green beans. Season with salt and pepper to taste. Continue to cook an additional 4-5 minutes.
- Once everything is cooked through, garnish with fresh chopped parsley if desired. Enjoy!
