Garlic Butter Hasselback Potatoes

Ingredients

  • 4-5 medium Russet potatoes
  • salt and pepper to taste
  • ½ cup melted butter
  • 1 teaspoon fresh parsley finely chopped
  • 1 teaspoon fresh thyme finely chopped
  • 1 teaspoon fresh Rosemary finely chopped
  • 3 cloves minced garlic 

Instructions

  1. Preheat the oven to 425 degrees Fahrenheit. Wash and scrub 4-5 medium russet potatoes. Slice the potatoes thinly leaving a ½-inch base at the bottom. Salt and pepper the potatoes.
  2. In a small bowl combine ½ cup melted butter, 1 teaspoon fresh parsley, 1 teaspoon fresh thyme, 1 teaspoon fresh rosemary, and 3 cloves minced garlic. Place the potatoes in a 9 x 13-inch baking dish. Brush the garlic herb butter along the tops of the potatoes.
  3. Roast the potatoes for 40-60 minutes or until fork tender.
