Ingredients

  • 8-10 large carrots
  • salt and pepper
  • ¼ cup melted butter
  • 1 tablespoon olive oil
  • 3 cloves chopped garlic
  • 1 tablespoon grated Parmesan cheese
  • freshly shredded parmesan cheese and parsley for topping

Instructions

  1. Preheat oven to 425 degrees Fahrenheit. On a sheet pan, line 8-10 large carrots in a single layer and sprinkle with salt and pepper.
  2. In a small bowl add ¼ cup melted butter, 1 tablespoon olive oil 3 cloves chopped garlic, and 1 tablespoon grated parmesan cheese. Pour on top of carrots and toss to coat.
  3. Roast for 20-25 minutes or until carrots are brown and tender. Serve with freshly shredded parmesan cheese and parsley for topping.
