Garlic Butter Roasted Carrots
Garlic Butter Roasted Carrots with a touch of canola oil, cracked black pepper and Kosher salt makes the perfect side dish for a weeknight meal or a holiday crowd.
Ingredients
- 3 pounds carrot any color carrots is fine, rainbow variety
- 2 tablespoons butter , melted
- 2 tablespoons canola oil
- 3 cloves garlic , minced
- salt to taste, Kosher salt, cracked black pepper
- black pepper to taste, Kosher salt, cracked black pepper
- parsley chopped, for garnish
Instructions
- Pre-heat the oven to 375 degrees.
- Slice thick carrots in half lengthwise, keep smaller carrots whole.
- Toss with butter, canola oil, garlic, salt and pepper (I used 1/2 teaspoon of salt and 1/4 teaspoon pepper)
- Spread onto baking sheet and cook for 30-35 minutes.
- Garnish with parsley if desired.
