Ingredients

  • 1 lbs (500g) fingerling potatoes
  • 3 tablespoons unsalted butter melted
  • 4 cloves garlic minced
  • 1/2 tablespoon garlic powder
  • 1/2 teaspoon salt
  • 1 tablespoon parsley chopped, optional

Instructions

  1. Preheat the oven to 400°F (207°C).
  2. Rinse the fingerling potatoes and pat them dry with paper towels. Slice each potato in half horizontally.
  3. Heat an oven-safe skillet (preferably cast iron) over medium heat. Add the melted butter and sauté the garlic. Add the potatoes and stir a few times before incorporating the garlic powder and salt. Mix well to combine.
  4. Transfer the skillet to the oven and roast for 20 minutes, or until the potatoes are golden brown, tender, and cooked through. If desired, top with chopped parsley. Serve immediately.
