Ingredients
- 1 lbs (500g) fingerling potatoes
- 3 tablespoons unsalted butter melted
- 4 cloves garlic minced
- 1/2 tablespoon garlic powder
- 1/2 teaspoon salt
- 1 tablespoon parsley chopped, optional
Instructions
- Preheat the oven to 400°F (207°C).
- Rinse the fingerling potatoes and pat them dry with paper towels. Slice each potato in half horizontally.
- Heat an oven-safe skillet (preferably cast iron) over medium heat. Add the melted butter and sauté the garlic. Add the potatoes and stir a few times before incorporating the garlic powder and salt. Mix well to combine.
- Transfer the skillet to the oven and roast for 20 minutes, or until the potatoes are golden brown, tender, and cooked through. If desired, top with chopped parsley. Serve immediately.
