Garlic Butter Smashed Potatoes

Crispy Garlic Butter Smashed Potatoes are easy buttery, garlicky potatoes with extra crispy skin topped with parmesan cheese. Perfect side for the holidays!

Ingredients

  • 12 Yukon Gold potatoes baby
  • 1/2 cup butter melted, unsalted
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper coarse ground
  • 3 cloves garlic , minced
  • 1/2 cup Parmesan Cheese grated

Instructions

  1. Preheat oven to 425 degrees.
  2. Add potatoes to a pot with cold water, covered by 2 inches.
  3. Bring to a boil and cook for 15 minutes.
  4. Drain water and dry potatoes gently.
  5. Add potatoes to a large bowl and toss with melted butter, salt, pepper, garlic and parmesan cheese.
  6. Add potatoes (leave the butter behind for now) to baking sheet and crush with a spatula or bottom of a glass cup.
  7. Top with the remaining butter mixture in the bowl.
  8. Bake for 25-30 minutes until golden brown and crispy.
