Garlic Chicken and Broccoli Cashew Stir Fry
Garlic Chicken and Broccoli Cashew Stir Fry is the easiest meal to make and only requires one skillet! This meal is packed with amazing flavor and crunchy cashews and will become an instant favorite!
Ingredients
- ¼ cup soy sauce
- 3 teaspoons garlic minced
- 3 tablespoons brown sugar
- 1 teaspoon sesame oil
- 1 pound chicken breast cut into bite-sized, boneless skinless, or thigh
- ¾ cup chicken broth
- 1 teaspoon cornstarch
- 3 cups broccoli florets
- 1 cup cashews
Instructions
- Make the sauce in a small bowl by whisking together ¼ cup soy sauce, 3 teaspoons minced garlic , 3 tablespoons brown sugar, and 1 teaspoon sesame oil.
- Heat a large skillet over high heat, then add 1 pound boneless skinless chicken breast or thigh and pour the sauce on top. Cook for about 5 minutes or until the chicken is no longer pink and reaches an internal temperature of 165 degrees Fahrenheit.
- Take ¼ cup of the ¾ cup chicken broth and mix it in a small bowl with 1 teaspoon cornstarch until the cornstarch has dissolved. Add the remaining chicken broth and 3 cups broccoli florets to the skillet with the chicken mixture. Cover and cook until the broccoli is tender, about 3-5 minutes.
- Add in the cornstarch mixture and cook over medium-low heat for a few more minutes until the sauce thickens. Stir in 1 cup cashews before serving over rice and garnish with green onions.
