Ingredients
For The Potatoes
- 3 pounds Russet potatoes peeled and cut into chunks, see notes
- 2 teaspoons garlic minced
- 4 ounces cream cheese softened
- 1/2 cup butter softened
- 1/2 cup sour cream
- 1 cup heavy cream can also use half and half
- 1 cup Parmesan Cheese shredded, divided
For The Seasoning
- 1 teaspoon basil
- 1 teaspoon parsley
- 1 teaspoon oregano
- 1 1/2 teaspoons salt
- 1/2 teaspoon pepper
Instructions
- Wash, peel and cut the potatoes into large 2 inch chunks. Place the potatoes in a large pot and cover with water. Bring the water to a boil and boil the potatoes for 15 to 20 minutes until they are fork tender.
- Transfer the cooked potatoes to a colander to drain the potatoes and rinse with cold water. Allow to cool for at least 10-15 minutes.
- Preheat the oven to 350 degrees and grease a 9x13 baking dish with nonstick cooking spray.
- Place the cooked potatoes in a large mixing bowl. Add garlic, cream cheese, sour cream, and heavy cream to the bowl. Use a potato masher or hand mixer to mash the potatoes and blend until smooth.
- Add 3/4 cup of parmesan cheese, basil, parsley, oregano, salt and pepper to the potatoes. Blend until the spices are well mixed into the potatoes.
- Spread the mashed potatoes with cream cheese into the prepared baking dish and sprinkle with the remaining 1/4 cup of parmesan cheese and cover with aluminum foil. Bake for 30 minutes until warm and gooey, then serve and enjoy!

Notes
- 3 russet potatoes is about a pound, so for 3 pounds of potatoes you'll need about 9 russet potatoes.
- 3 pounds of Yukon gold potatoes or red potatoes can also be used in place of the russets.
- Garlic cloves are each about 1/2 teaspoon of minced garlic, so for 3 pounds of potatoes, you would need about four cloves of fresh garlic.
