Ingredients

  • 2 tablespoons soy sauce or coco aminos
  • 1 tablespoon melted coconut oil
  • 1 tablespoon finely minced garlic
  • 1 tablespoon finely minced ginger
  • 2 lbs. bone-in chicken thighs - about 8 pieces skin on or off, your choice

Instructions

    Cup of Yum
  1. Preheat your oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper.
  2. Mix the soy sauce, melted coconut oil, garlic, and ginger in a medium-sized bowl. Add the chicken and toss so that it is well coated. If you're using skin-on chicken, use your fingers to push some of the ginger and garlic under the skin.
  3. Place the chicken on the baking sheet and bake for 40 minutes, or until the chicken is well browned on the outside and has reached an internal temperature of 165 degrees Fahrenheit.
