Ingredients
- 3 ripe avocados
- 1 head roasted garlic
- ½ cup yellow onion, finely diced
- 1 jalapeno or serrano pepper, finely diced
- 1 tablespoon fresh squeezed lemon or lime juice
- 1 teaspoon cumin
- salt to taste
Instructions
- First, roast garlic (follow the link for instructions).
- Lightly mash the avocado, roasted garlic, lime juice, cumin, and a pinch of salt together.
- Add finely diced jalepeno or serrano pepper and onion and mix until just combined.
- Taste, and adjust seasoning to suit your preferences.
- Serve immediately or refrigerate until needed.

Notes
- A pinch of smoked sea salt adds a lovley smokiness. Highly recommend!
- When refrigerating, cover the guacamole in a bowl with plastic wrap, tucking tight to the top of the guacamole to keep as much air out as possible (this helps prevent premature browning).
