Garlic Herb Parmesan Croutons

Ingredients

  • 5 cloves garlic peeled and lightly pounded
  • 1 tablespoon parsley leaves finely chopped
  • 1/2 teaspoon salt or to taste
  • 1/4 cup olive oil
  • 4 pieces bread cut into 3/4-inch (2cm) cubes (about 6 cups)
  • 1/4 cup finely grated fresh Parmesan

  1. Preheat the oven to 350°F (176°C).
  2. In a small saucepan, combine the garlic, parsley, salt, and oil, and simmer the mixture for 3 minutes. Discard the garlic.
  3. In a bowl, toss the bread cubes with the oil mixture. Spread them in a single layer on a cookie sheet lined with parchment paper.
  4. Bake in the middle of the oven for 8 minutes. Sprinkle the croutons with Parmesan and bake for an additional 5 minutes, or until they are golden. Sprinkle with extra salt and let them cool.
  5. The croutons can be stored in an airtight container for up to 1 week. Serve them as a topping for tossed green salad.
