Ingredients
- 4 cups Mixed olives I used castelvetrano, large green Sicilian, nicoise, and kalamata
- ¼ cup extra virgin olive oil
- 6 prigs thyme leaves removed
- 4 cloves garlic thinly sliced
- ½ teaspoon crushed red pepper flakes
- 2 tablespoons orange juice
- 1 tablespoon orange zest
Instructions
- Preheat oven to 400 degrees F.
- On a rimmed baking sheet add olives, olive oil, thyme leaves, sliced garlic and crushed red pepper flakes. Stir to combine and evenly coat.
- Add to the oven and bake for 10 minutes.
- Remove olives from the oven and cover the olives with orange zest and orange juice. Toss to combine.
- Serve warm or room temperature.
