Ingredients

  • 3 pounds small white potato or small red potato
  • 3 tablespoons olive oil
  • 2 tablespoons garlic about 6 to 7 cloves, minced
  • 2 tablespoons parsley or other herbs, fresh
  • 1 teaspoon salt
  • ½ teaspoon black pepper

  1. Slice potatoes. Preheat your oven to 400°F. Cut the potatoes in half or quarters (if they're large) and place them in a mixing bowl with the olive oil, minced garlic, parsley, salt, and pepper.
  2. Toss everything together until well coated.
  3. Roast the potatoes. Transfer the potatoes to a sheet pan and spread them out on one even layer. For an extra crispy side, make sure they're cut side down on a baking sheet. Roast the potatoes for 45 to 55 minutes, stirring halfway through, until golden and browned.
  4. Garnish and serve. Transfer the potatoes to a serving bowl. If you'd like, sprinkle a little extra parsley on top before serving.

Notes

  • Store cooked potatoes in an airtight container in the fridge for up to 4 to 5 days; they soften with time, so eat sooner for best texture.
  • Freeze leftovers by spreading them on a baking sheet to freeze individually, then transfer to a freezer-safe container; safe for about 3 months.
  • Reheat in an air fryer at 400°F for around 3 minutes, shaking halfway, to regain crispiness rather than using a microwave.
