Ingredients

  • 8 cups spiralized zuccchini loosely packed
  • 1/2 cup fresh shredded parmesan cheese
  • 1 tablespoon olive oil
  • 4-5 lg cloves fresh garlic
  • 1/2 tsp kosher salt
  • 1/4 tsp fresh ground black pepper

Instructions

    Cup of Yum
  1. Add zoodles to a colander in the sink or over a bowl and sprinkle with 1 tsp of kosher salt. Let sit for 15-30 minutes to sweat. Then use a paper towel to squeeze out any excess liquid.
  2. In a large saute pan, heat olive oil over medium heat and add garlic.  Saute for 1-2 minutes, careful to not burn.
  3. Add zoodles, salt and pepper and saute for 3-5 minutes until zoodles are soft, turning often with tongs.
  4. Add Parmesan cheese and mix well.  Serve immediately and top with more Parmesan cheese if desired.

Notes

  • Have your tongs ready to turn those zoodles while they cook.
  • Add some additional veggies!  Like onion, peas, diced tomatoes, or even some spinach.
  • Add a protein! Diced chicken or shrimp would be delicious.
