Ingredients

Pork
  • 4 boneless pork chops (approximately 2 pounds), cut into 1-inch pieces
  • 1 teaspoon onion powder
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 tablespoon extra virgin olive oil
Sauce
  • ¼ cup (½ stick) unsalted butter
  • 1 teaspoon garlic, minced
  • 1 tablespoon all-purpose flour
  • ½ cup chicken broth
  • ½ cup heavy cream
  • ½ cup grated Parmesan cheese
  • 2 tablespoons lemon juice
  • Salt and pepper, to taste

Instructions

  1. Season pork evenly with onion powder, salt, and pepper.
  2. In a large, 12-inch skillet, heat olive oil over medium heat. When the oil is hot, add pork and sear for 3-5 minutes on all sides until cooked through (about 13-15 minutes total). Pork is cooked through when it reaches an internal temperature of 145°F.
  3. Remove the pork from the skillet and set it on a plate. Tent it to keep the pork warm.
  4. In the same skillet, melt butter. Add garlic and cook for 1 minute. Whisk in flour until slightly thickened.
  5. Add in chicken broth, heavy cream, parmesan cheese, lemon juice, salt, and pepper.
  6. Let the sauce simmer for 5-8 minutes, or until thickened.
  7. Add pork bites back to the pan and toss them in the sauce to coat. Serve immediately.
