Ingredients

  • 2 1/2 pounds pork chops boneless, sliced
  • 4 cloves garlic minced
  • 2 tablespoons ginger grated
  • 2 tablespoons soy sauce low sodium
  • 2 tablespoons hoisin sauce
  • 1 tablespoon Chili garlic sauce
  • 2 teaspoons fish sauce
For the sauce:
  • 2 tablespoons rice wine vinegar
  • 2 tablespoons soy sauce low sodium
  • 2 tablespoons honey
  • 1 tablespoon Chili garlic sauce
  • 1 tablespoon hoisin sauce
For the stir-fry:
  • 2 tablespoons vegetable oil
  • pork marinated
  • 2 cups mushroom sliced
  • 2 bell pepper seeded and thinly sliced, red
  • 1 pound green beans lightly steamed
  • 1/4 cup peanut chopped
  • 1/4 cup green onion green part only, diced

Instructions

For marinade:
    Cup of Yum
  1. Add all ingredients to a large bowl and stir to combine and cover equally.
  2. Let the mixture sit in the refrigerator for at least 2 hours but up to 24 hours.
For sauce:
  1. Add all ingredients to a small bowl and whisk together, set aside.
For stir-fry:
  1. Add oil to your 12-inch high-sided skillet and set over medium-high heat.
  2. Once the oil is hot add in the marinated pork and cook while stirring the meat. You want the meat to no longer look pink on the outside but not 100% cooked through. This will not take too long since the meat is sliced.
  3. Take the meat out of the stir-fry pan and place it on a plate.
  4. In the pan add a little more oil (if needed) and add in the mushrooms and red bell pepper.
  5. Cook for 5-7 minutes to help soften both vegetables.
  6. Add the pork back to the stir-fry pan along with the green beans and sauce mixture.
  7. Stir to combine and let the sauce coat the whole mixture.
  8. Let the stir-fry cook for about 5 minutes to help thicken the sauce.
  9. Serve plain or with rice.
