Ingredients

  • 1 bunch (about 6 - 8 whole) carrot tops trimmed to 2 inches, fresh
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 teaspoon kosher salt
  • 1/2 /2 teaspoon black pepper ground

Instructions

  1. Preheat oven to 425º F. Line a baking sheet with parchment paper.
  2. Place carrots in a single layer onto the lined baking sheet. Add olive oil, garlic, salt, and pepper to the carrots and gently toss to coat.
  3. Bake for 20-25 minutes, or until fork tender. Remove from the oven and serve.

Notes

  • Substitutions
  • Use 1 - 2 teaspoons of Stone House Seasoning in place of the garlic, salt, and pepper.
  • To make ahead or store leftovers. Cool and then store in an airtight container in the refrigerator for up to 4 days. Reheat and serve.
  • To freeze. Cool and store in a freezer-safe container for up to 3 months. Thaw in the refrigerator overnight. Reheat and serve.
