Garlic Roasted Potatoes

Ingredients

  • 1 1/2 lbs fingerling potatoes
  • 1 Tbsp avocado oil
  • 3 Tbsp butter or ghee
  • 4 cloves garlic
  • 1 Tbsp fresh herbs I like oregano and parsley
  • sea salt to taste, coarse

Instructions

  1. Place the potatoes in a pot and fill with water. Bring the pot to a full boil and cook for 15 minutes, until potatoes are soft when poked with a fork. Drain the potatoes.
  2. Preheat the oven to 425 degrees F. Transfer the boiled potatoes to a casserole dish or baking sheet and drizzle with avocado oil and melted butter. Sprinkle the garlic over the potatoes. Use a spoon to toss the potatoes around until they are well coated in oil/butter/garlic.
  3. Roast in the oven for 20 to 25 minutes, or until potatoes are golden-brown and have a nice crisp.
  4. Remove from the oven and transfer potatoes to a serving bowl. Sprinkle with sea salt and fresh herbs and serve.
