Garlic Roasted Red Potatoes

Garlic Roasted Red Potatoes are my latest obsession. They've been served for dinner at my house at least once a week lately, and they will most certainly be making an appearance on my Christmas dinner table. Look at that crispy skin, slightly crunchy edges, and all that scrumptious garlic and salt flavoring. You can just taste them, can't you?

Ingredients

  • 2 pounds red potatoes, cut into chunks
  • 2 tablespoons olive oil
  • 4 garlic cloves, minced
  • 1 teaspoon kosher salt

Instructions

  1. Preheat the oven to 425F degrees. 
  2. Place all the ingredients on a baking sheet and toss throughly to coat. 
  3. Roast potatoes for 45 minutes or until fork tender and crisped.
